MS 91 and MS 80 are popular emulsifying salt for cream cheese. It gives good spreadability and shiny structure.
MS 12 and MS 45 are correction salts.It is used for pH balance for end product.
M 900 is the special blends for preventing coagulation of milk during heat treatment and late gelation during shelf life. The phophate is cover and keep protein. The product will be more resistant during shelf life and heat treatment.
M900 could be used for cream, ful-fat, half fat, light milk,condens milk…etc.
MS-B has antibacterial effect .It effects clostridia,s.aureus..etc. bacteria.
